Quercy’s defining features are the causses, or limestone plateaus, formed by centuries of wear and tear from the local rivers. Some of these causses are topped by chateaux or fortresses, while towns and villages have been built into the cliff side. Others have been left in their natural state, a no less beautiful sight to behold. What’s more, these causses provide the perfect nursery for one of the region’s culinary claims to fame: la truffe noire, or black truffles.
